A special delicious food, for those who love mushrooms.

Ingredients for 6 servings

• 500g coarse barley
• 1 kg of mushrooms, preferably wild (agaric, Pleurotus, lactarius)
• 100 g of wine
• 5 dry onions
• 3 medium carrots
• 4 cloves of garlic
• 7 tablespoons of olive oil
• 2 tablespoons of fresh butter
• 100g tomato sauce & 1 tablespoon tomato paste

Implementation

• Fry the onion, carrot, and garlic in the olive oil in a pot.
• We extinguish with the wine.
• Add the mushrooms and continue frying for a few minutes.
• Remove the mushrooms from the pot and add 3 glasses of water.
• After it boils, add the barley and boil for 8 minutes.
• Spread the mixture in a pan, add the mushrooms and bake in a preheated oven for 5 minutes. At Montanema Handmade Village we bake in the wood oven which makes the food even tastier!
• Serve with fresh parsley and grated kefalograviera.
